Cheesy Potato Pancakes with Sausage
Ingredients
1 (12 oz.) pkg. Johnsonville® Original Breakfast Patties Crisco® Original No-Stick Cooking Spray 1 cup Hungry Jack® Buttermilk Complete Pancake & Waffle Mix (Just Add Water) 1 1/2 cups Hungry Jack® Instant Mashed Potatoes, Flakes 2 1/2 cups milk 2 large eggs 2 Tbsp. Crisco® Pure Vegetable Oil 2 Tbsp. Hungry Jack® Original Microwaveable Syrup (optional) 1/2 cup shredded carrots 1/4 cup sliced green onion 1/4 cup grated Parmesan cheese 1/2 cup shredded sharp Cheddar cheese
Directions
Cook and crumble sausage patties in large skillet over medium heat until no longer pink. Drain, if necessary. Spray skillet or griddle with no-stick cooking spray. Heat skillet over medium-high heat or electric griddle to 375˚F. Combine pancake mix and potato flakes in large bowl. Whisk together milk, eggs, oil and syrup, if using. Add liquids to dry ingredients, stirring just until large lumps disappear. Blend in carrots, green onions, Parmesan cheese and cooked sausage. Pour 1/4 cup batter for each pancake onto hot skillet or griddle. Cook for 3 minutes. Turn. Cook 2 to 3 minutes more or until golden brown. Place 3 or 4 pancakes on dinner plate. Sprinkle with Cheddar cheese and serve.
Crisco® Original No-Stick Cooking Spray 1 (4.9 oz.) box Hungry Jack® Au Gratin Potatoes 2-2/3 cups boiling water 1 tsp. Italian seasoning, divided 1 (14 1/2 oz.) can diced tomatoes with green pepper & onion, undrained 1 (12 oz.) pkg. Johnsonville® Original Breakfast Patties 1 cup Hungry Jack® Buttermilk Complete Pancake & Waffle Mix (Just Add Water) 1/2 cup water 1/2 cup shredded Mozzarella and Cheddar cheese blend
Directions
Heat oven to 400˚ F. Lightly coat a 9x9-inch baking dish with no-stick cooking spray. Combine potato slices, boiling water, 1/2 teaspoon Italian seasoning and sauce packet in prepared pan. Bake uncovered 20 minutes. Remove from oven. Reduce oven temperature to 375˚ F. Crumble and cook sausage patties until brown. Drain, if necessary. Stir in tomatoes. Spoon evenly over partially baked potatoes. Blend pancake mix, 1/2 teaspoon Italian seasoning and water. Spread evenly over sausage mixture. Bake uncovered 20 to 22 minutes or until pancake layer is light brown. Sprinkle with cheese. Cover with aluminum foil. Let stand 10 minutes before serving.

Topping: 1 cup Hungry Jack® Instant Mashed Potatoes, Flakes 1/4 cup butter or margarine, melted 1/4 tsp. salt 2 Tbsp. chopped chives
Directions
Crumble and cook sausage in skillet over medium-low heat for 5 minutes. Add onion, green pepper and red pepper. Cook an additional 5 minutes. Heat oven to 400˚F. Coat 9x9-inch baking pan with no-stick cooking spray. Place potatoes and cheese packet in large bowl. Stir in boiling water. Whisk milk, eggs and garlic powder in medium bowl. Add to potatoes. Stir in sausage mixture. Pour into prepared pan. Combine potato flakes, butter and salt with a fork until evenly moistened. Stir in chives. Sprinkle on top of potatoes. Bake for 30 to 35 minutes or until potatoes are tender and top is golden brown. Let stand 5 minutes before serving.
Pancakes: 1 (12 oz.) pkg. Johnsonville® Brown Sugar & Honey or Vermont Maple Syrup Links Crisco® Original No-Stick Cooking Spray 2 cups Hungry Jack® Buttermilk Complete Pancake & Waffle Mix (Just Add Water) 1/2 tsp. ground cinnamon 2/3 cup water 2/3 cup Hungry Jack® Microwaveable Butter Flavored Syrup Napkins (optional)
Directions
Cook sausage links in large skillet over medium-low heat for 10 to 13 minutes or until golden brown and no longer pink. Spray skillet or griddle with no-stick cooking spray. Heat skillet over medium heat or electric griddle to 325˚F. Combine pancake mix and cinnamon in a medium bowl. Stir to distribute spice. Add water and syrup. Stir just until large lumps disappear. Pour slightly less than 1/4 cup batter for each pancake onto hot skillet or griddle. Cook about 2 minutes per side or until light golden brown. Roll one pancake around each sausage. Wrap in napkin, if desired. Place dipping sauces into small individual bowls. Warm in microwave 15 to 30 seconds on HIGH. Stir.
